Tapas Timeby Fred Schlatter |
When time is tight, there’s nothing wrong with throwing a few ingredients on top of toast and calling it tapas. Case in point: garbanzos, shaved shallots and radishes, and some micro greens or herbs. Someone pop a bottle of rosado.
Two Minute Tapas
1 loaf of crusty bread
1 pouch of FILLO’S Panamanian Garbanzos
1 clove of garlic
handful of fresh herbs or greens
Heat a grill or broiler. Slice bread on an angle and moisten with oil. Grill or broil until crisp and lightly charred. Meanwhile, thinly slice radishes and shallots, and heat FILLO’S Panamanian Garbanzos in a microwave. Rub bread with half a garlic clove while still warm. Top with garbanzos, radishes and shallots, and a few snips of greens or herbs. Arrange on a platter and drizzle with a little more olive oil. Sprinkle with sea salt.
