We spend a lot of time talking about our sofrito. It deserves the attention, with all its fresh vegetable, spice and evoo goodness. But let’s not forget the humble bean—perhaps the real star of the show. We source the good stuff—mostly from Midwestern family farms. They’re loaded with plant protein, and as they cook, break down and thicken the sofrito into a fragrant, mouth-coating flavor bomb. Not to be too much, but it’s sort of a miracle.
